    Banana blueberry wholemeal muffins

    These muffins are delicious and the perfect morning snack with no added sugar and the ingredients are rather wholesome – bonus! 

    You’ll need two ripe mashed bananas, one egg/egg replacer, half a cup of water, 125ml vegetable oil, two cups of wholemeal flour, one cup fresh blueberries, one teaspoon of baking soda and two and a quarter teaspoons of baking powder.

    To make the muffins, start by greasing a muffin tin with butter or cooking spray, and preheat the oven to 180 degrees Celsius. Next, thoroughly mix together the wet ingredients (bananas, egg, water and oil), before adding the dry ingredients to the mixture. Once well combined, gently fold in the blueberries and bake for around 15 minutes or until golden.
